Vegan Kale Salad
If you have never tried kale salad, you really don’t know what you have been missing. This salad is very flavorful and delicious; an experience that you will never forget. I’m actually craving for kale salad, I just can’t seem to get enough. Kale leaves are finely cut, then marinated in an oriental dressing. The sweet and tangy blend with creamy avocado lends a satisfying appeal to the taste buds, having you coming back for more.
Kale is a dark green leafy vegetable, a member of the brassica family along with Brussel sprouts, cabbage, collards and broccoli. It is known to be one of the healthiest vegetables, an excellent source of vitamins and minerals. Read this article for more on the health benefits of kale.
As I try to offer healthier alternatives to my readers, I’m also mindful that different people are at different stages in their knowledge. You can substitute coconut aminos in your recipes such stir fries, sauces, marinades and salad dressings; just the same way you use Bragg’s Liquid Aminos, tamari and soy sauce.

- 1 bunch kale (remove thick stems)
- 2 Tbsp lime or lemon juice
- 2 Tbsp coconut aminos, Braggs liquid aminoes, or soy sauce
- 1 Tbsp maple syrup
- 1 tsp sesame oil
- 1 escallion finely chopped
- 2-3 cloves of garlic, minced
- 1 tsp sea salt
- 2 tsp ginger, grated
- 1 avocado, diced
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 red onion, diced
- 1/2 red cherry tomatoes
- sesame seeds to garnish
Wash and dry kale leaves, finely cut leaves and place into a large bowl. Into a small bowl, combine the lime/ lemon juice, coconut aminos, maple syrup, sesame oil, escallion, garlic, sea salt, ginger. Add mixture into kale leaves and massage until wilted, add 1/2 of the avocado and massage for a creamy sauce. Then add the rest of the ingredients, garnish with sesame seeds and serve.
