Serving Size- 40 pieces
- 500 gr. phyllo dough (17.6 oz) ( about 16 dough sheets)
- 7 apples
- 14 tbsp. brown sugar
- 150 gr. crushed walnuts (5.30 oz)
- 50 gr. grounded almonds (1.75 oz)
- 50 gr. grounded hazelnuts (1.75 oz)
- 1 tsp. cinnamon
- 1 tsp. orange rind
- 1 tsp. lemon rind
- 1/2 cup sparkling water
- 4 tbsp. coconut oil
Peel the apples, grate them and place them in a bowl. Add the sugar, walnuts, almonds, hazelnuts, cinnamon, orange and lemon rind. Mix everything well. Combine the sparkling water and the oil in a cup. This amount should be enough for the whole phyllo dough.
Take one sheet of filo, and using pastry brush add a bit of the sparkling water-oil mix. Then add the second layer ( without brushing sparkling water and oil) and immediately add the apple filling. Make sure you place the filling everywhere on the layer ( not just on one place). Roll the 2 layers and place this in an oiled rectangular baking tray. Repeat the procedure with the remaining phyllo dough sheets. At then end there should be 8 rolls. When you finish, using the pastry brush add the remaining sparkling water-coconut oil mixture evenly on each of the rolls.
Note: You must be careful not to add too much of the sparkling water-oil mixture, as the phyllo sheets will be too wet and you will not be able to roll them properly. It is best to use 1/2 of the water-oil mixture while you prepare the rolls and the remaining 1/2 after you finish all the rolls.
Bake at 200 ºC ( 392 °F) for about 40 minutes until the dessert gets golden brown color. When it is ready, leave it to cool a bit ( 30 minutes) and then using tea strainer add powdered sugar. Wait for an hour and then serve this tasty dessert. Enjoy the incredible taste.
