Tangerine, Arugula, and Spinach Salad with Spicy Tangerine Vinaigrette

Arugula adds a nice peppery bite to the salad while the mint adds a cool, refreshing component alongside the sliced tangerines. You will love the combination of sweet and spicy in this perfectly combined salad recipe!
2 avocados, sliced
4 tangerines or clementines, peeled and sliced into rounds
3 cups arugula
3 cups baby spinach leaves
1/2 cup fresh mint leaves
1/4 cup almonds, sliced
2 ounces feta or goat cheese, crumbled (omit for dairy free)
1/2 cup fresh tangerine juice
2 tablespoons apple cider vinegar
4 tbsp olive oil
1/4 tsp cayenne pepper
1 tsp garlic powder
1 tsp. kosher salt
1/2 tsp. ground black pepper
In a large salad bowl, mix together your spinach, arugula, and mint leaves. Layer your avocado, tangerine slices, sliced almonds, and feta or goat cheese on top of spinach/arugula mixture.
Whisk together all your ingredients for the vinaigrette in a small bowl until thoroughly combined.
Drizzle vinaigrette over salad prior to serving.
