Quick Potato and Leek Salad Recipe
It is very easy to prepare, it doesn’t take more than 30 minutes. It is tasty and appropriate for any occasion. It is also suitable as a side dish or a light meal on its own.
- 6 potatoes
- 2 leeks ( both white and green parts), sliced
- 1 onion, chopped
- 2-3 tbsp. apple cider vinegar
- 4 tbsp. olive oil
- salt to taste
- black pepper ( optional)
Peel the potatoes, wash them well, cut them into big chunks and put them in a pan. Add water and 1/2 tsp. salt. Turn on the heating and let them boil. Salty water reduces the time for the boiling process, so they will be ready in about 15-20 minutes. In the meantime chop the leeks and the onion. When the potatoes are ready, remove the pan from the heat, drain them and let them cool for about 5 minutes. Mix them with the previously prepared leeks-onion combination and season with olive oil, apple cider vinegar and salt. Stir well and serve immediately.
